If you were to make it vegan/vegetarian, you would have to substitute
the store-bought koftas with a quorn-like setup with garlic, grated
onion, cumin, coriander, paprika, parsely and mint, as seen from
this
cursory search on the subject.
If you only had minced meat at hand, the same link (or a similar one in
premise) would allow you to make koftas. These were cylindrical shaped
and rather wide for their size.
This is a kofta with lettuce, raw red onions, spinach and sri-racha.
